Introduction to Spanish Gastronomy
Spanish cuisine is one of the jost exciting, rewarding and varied of the world due to the different civilizations that have left their mark throughout history. This rich cultural heritage provides us with thousands of recipes and flavours that form the backbone of this unique gastronomy
 
So many different regions and such a sharp difference between them allow us to one minute savour an exquisite seafood dish on the coast, and just a short journey later a delicious mountain dish.
 
One of the great advantages that Spain has is that it is near the main migratory routes of fish, meaning it has access to a great number of species that are the envy of the fish-eaters of the rest of the world.
 
There are also delicious cheeses and beef which come from the north (Roncal cheese from Navarra and tender beef from Galicia).
 
In the South of Spain you can enjoy fresh seafood, a diverse range of fried tapas (deep frying is a culinary technique that is a legacy of Spain's Jewish population) and the much known cold soups like Gazpacho or Ajo blanco (white garlic).
